1. What office name should be selected?

2. What should be mentioned in other party details?

3. What should be particulars in Property details?

You can visit the website of that particular bank wherein you are going to make the payment via e-SBTR. There the process will be explained in detail. 

As far as I recollect:

1) First you will have to remit the payment online (by selecting the appropriate branch you will be visiting) & after doing the same, a challan gets generated. 

2) Take the printout of the Challan & show the same to the officer of the concerned branch.

3) The person will then match the details of the challan with the details appearing in his system.

4) If everything tallies, then he will process the same for franking or stamping the same on the instrument.

I have replied, based on what I recollect. Hence I suggest, kindly visit the website of the particular branch or visit the branch in person for better clarity.

Payment can be made through any bank or only form IDBI and PNB???

Union Bank also has I think. You need to check whether the concerned bank has such facility.

if there are no. of allottees, you can pay stamp duty lumsum and mention on certificate that ref. and attach stampduty cert with share certificate
