This gives me an error

PropsSI("H","Q",0,"S",6872,"water")

error: Input pair variable is invalid and output(s) are non-trivial; cannot do state update

How can I get the saturated liquid enthalpy for a specified entropy for water?

As the error message indicates, those inputs are not supported and you will need to do the iteration yourself.
