How do i print something in native iOS that will show when I call send log?

You will need to callback into the Log class from native code see the developer guide section on calling Codename One code from native:

Read the section of the developer guide you provided. Are there any demos for the iOS implementation of native callbacks?

There are samples in the guide. I use callbacks in the braintree cn1lib https://www.codenameone.com/blog/braintree-paypal-cn1lib.html
