We are using Google Pubsub with Apache Camel. We have set up a dead letter topic and subscription so that after 5 unsuccessful delivery attempts the message is sent there.

So now suppose we fix the problem that caused the delivery failures. How do we replay the undelivered messages in the dead letter topic's subscription? Is that possible?

David, you have to do it "manually." That is by writing a client that reads messages from a subscription to the dead letter topic and republishes them to the original topic.  Alternatively, you can run an instance of your. Subscriber client but pointed at a subscription to the dead letter topic, rather than production.
