Hoping someone can point the way... first time making a rural method cider. Carried out a number of rackings. Measured the SG today at 1.018 which gives an FSU of 8. The cider is quite lively and not particularly clear... temperature in the shed is 10°c.
I'm not overly fussy on where it finishes... somewhere between 1.004 and 1.010 would be good.
I was initially inclined to let it roll but the fact that it's quite lively and not clear has made me doubt that idea.
Should I rack or leave it?
