So, this makes me wonder: given the main argument for having
documentation on Google Docs was the ease of submitting and receiving
user contributions, would you be open to reconsider that decision now?

No offense. But I was very confused when I first met Beancount. Google
Docs is a very good collaborating platform but a poor choice for
software documentation. I remember when I needed to look up for some
syntax or usage I cannot search thru the documention because
"site:docs.google.com beancount" does not return any useful results [1]
-- it's very ironic that a search engine does not index its sibling
website well. The Docs page itself is slow to load compared to simple
HTML (without a ton of AJAX) or plain text documentation that were
popular among open source projects.

I'm not hugely excited about Google products in general due to their corrosively broad erosion of privacy in society (same thing goes for Facebook's platform in my opinion).
But given that you've found Google Docs efficient for producing quality documentation, great. Having good documentation is really helpful.
However, I agree with Zhoyun Wei that I find the Google Docs solution difficult to search against all the beancount documentation when I'm looking for something.
Is there an easy way to search beancount's documentation within Google Docs?

AFAICT this works only if you are logged into a Google account, and have
added all Beancount documents to your "drive".
If there is a way to make this work without (being logged into) a Google
account, I'm interested in learning about it.

My only comment (in the same spirit of Dominik's point about lowering
the barrier for contributions) is to document in the doc itself how to
contribute.
I understand you want comments/edit suggestion via Google Docs. And each
sphinx document already points to the corresponding Google Docs origin.
I suggest prefixing each link with something like "to suggest edits to
this document go to ...".
And I'm assuming you will re-enable
suggestions on the Google Docs once the sphinx documents will be
advertised as the main entry points for users, right?

Except for the code blocks (they should be in a monospaced font, as otherwise it would be confusing for the reader), and the sidebar (can be configured in Sphinx, afaik), this looks as pretty as I hoped for.
How much work do you plan to put in until you "release" this? (As it looks like not much is needed for "release-readyness", imho.)

I'm finally getting round to implementing some imports after using beancount for more than a year, and I think the 'Importing External Data' section could use some sprucing up, wondering how I would suggest changes now that the Google Doc suggest edits route is no longer open.
