help a newbie get potentiometer input into a beagleboard x15

Hello I'm trying to connect rotary encoders and potentiometers to my beagleboard x15 to make a guitar pedal, do I need to use a breakoutboard for this? I'm having trouble finding the correct type of expansion cable to use to connect my beagleboard x15 to a breadboard, i know the expansion ports are 60 pins but is there an official cable to use or path I should take for accomplishing this?
