Change text color only in .txt files

How would I change the colour of the text, but only for a text document?

If I go to Preferences--> Text Colors, pick the Theme then under General change the Plain Text color, it is a global change affecting all plain text in all languages, etc.

What I'm trying to do is change the text color only for .txt files (and other files that BBEdit classifies as text files).

Thoughts??

You can save the text color settings as a custom color scheme and use
the color scheme here.
Open Preferences > Languages > Language-specific settings, add a
language, then open Display > Color scheme
