Hope you are doing well.

I have a question please.

How can we get exclude site categories (like "Crime, Police and Emergency" or "Death and Tragedy") from Google Ads API?

To have a clearer view on how to exclude site categories that you mentioned, would you be able to provide the screenshot of the Google Ads UI without cropping that you are referring to? I ask this so that we can provide accurate recommendations here.
