A book appears to have now been published from the Pala-dino conference last year: https://publicacionesier.es/monografias/es/paladino-lenguas-romances-dinosaurios . When I checked the publication page Jerry gives, all of the chapters are available as free pdfs if you click on the chapter titles. The texts are in various Romance languages (Spanish, Catalan, Portuguese, Romanian, French) with an English abstract. The text can be copied and translated with online tools if you don't read the language.
