Kumquats

It’s been noted that it’s kumquat season! I’m a little appalled at the per-pound prices at the stores this year ($12-$16/lb?), and am thinking about getting 10lb box shipped from a grower in Florida. I don’t need quite that much, would there be interest from anyone in sharing that with me? It looks like it would be ~$5/lb. For reference, I believe I usually add around ~2lb to a 5gal batch of berlinner weiss.

Not sure if they are still there, but on Friday I found kumquats at Trader Joes for $8 per pound. Still, I'd be game for going in on this if you don't find any other takers. Pureed kumquats keep really well in the freezer.

Kumquats are very hard to find and expensive.  I've had some good luck using some other citrus fruit puree like tangerine in conjunction with kumquats.

Dude, aren’t you in Florida, aka Kumquat-Central?  I’d think you’d just be able to pick them off of a tree in your backyard!

So we get kumquats from a local farmer who always promises more than he can deliver.  We won a silver medal for our kumquat beer at both GABF and our state wide competition last year and I could only make about a 1/5th of what I could have sold which was very frustrating.  I have tried this whole last year to find more kumquats in the volume that I need.  Oregon fruit at one point said that they had considered it for a seasonal and with the volume I needed it would be worth it for them to make it happen, they couldn't find the fruit.  I've tried with about a half dozen other fruit companies, the sales people always start out all enthusiastic and when I follow up over the weeks and months they have all come back empty handed.  So in short, yeah kumquats are difficult to source.

Sounds like you need to buy a plot of land and start planting!  The world needs more kumquats. 

What kind of beer were you making?

Processed 10lbs of kumquats last night (de-seeded, puréed, froze) that I had shipped direct from a grower in Florida. I didn’t plan on processing them all, but I just found a groove.  It seems unlikely I’ll use them all in a year, so hit me up if you find yourself in need of a bit this year and missed them at the store.

Nice! Did you StarSan them? I'm never sure how best to sanitize fruit. I doused my 2 lbs in vodka before pureeing them, though it would take a lot of vodka to do your 10 lb batch.

I normally don’t bother sanitizing fruit. But since there was a few of them that looked like they at least needed rinsing off, I did run them all through a big bowl of StarSan. Not a big effort compared to something delicate like berries.
