There is only one beta table used for all channel models. It is derived from link simulations of "A collection of LOS (TDL-D) and NLOS (TDL-A) channel models ranging in delay spread from 30 ns to 316 ns are used. For NR, subcarrier spacing (SCS) of 30 kHz and 60 kHz are simulated." ... "The calibration is done over all the different channel realizations (represented by the set ζ) of the chosen channel models mentioned previously and different values of noise variances (represented by the set η)."

I am not aware of any studies or data as to how well these beta values fit channel models different from those it was calibrated on. Beamforming and MIMO processing could also cause some changes (i.e., the goodness of fit of the EESM parameters may also be sensitive to changes in beamforming configuration).
