Cozumel in January?

My wife and I are planning a trip to Cozumel in January to celebrate her 30th Birthday. Of course that means at least three days of fishing! Wondering if anyone has been there and can share tips. Any information would be greatly appreciated. We've been in contact with Randell with Australia America Fishing Connections who is down there.
