I've never targeted them on the fly, but spin fishing they'd always take flashy lures imitating baitfish. Try a clouser witg extra flash, or really any baitfish pattern.

I've done pike before, "any baitfish pattern" is the right answer.  However, for fishing all day durability is more important than if it looks like food.

Bunny bug:  bunny strip tail, bunny palmered as the body, bead-chain eyes.  2/0-4/0 hook.  Casts horribly, lasts forever.

Deceiver in 2/0 in white, black, or something else.  Fairly durable.

For summer, the fish go deep and clousers on sinking lines work well.  Fairly durable.

Other things you could try:
Mylar zonkers  
Surf candy or other epoxy baitfish patterns
Hard-bodied pencil poppers

The important thing for pike is leader.  I went for years using 20# hard mason mono and a non-graduated leader as long as you check it after each fish.  Some people swear by a wire tippet.

I had a ball in Maine this August with Chain Pickerel, at sunset they
started to bite on anything; Clousers, craw fish imitations even
poppers.

Lots of fun with spinners and spoons on a spinning setup, they have a long lateral line and are sensitive to the vibrations. I've had some luck on the fly with a white and blue deceiver (Size 2). The leader is important, I've used about 12 inches of 12-15lb braid as a tippet and had that work very well. Those fish aren't leader shy and dont worry about using heavier mono. I've found braid to be stronger and also allows the fly to move a lot more naturally compared to wire. Work near weed beds and structure as these fish ambush their prey.  I've caught my largest chains on a quick strip then pause to let the fly flutter, quick strip then pause etc.

Good luck, the bigger ones will take some nice runs. Slimy fish to handle though so bring a towel.

A Clouser with lots of white should work. We target pickerel in lakes in the summer every year. White and flashy flies work well early in the season, later in the summer they go deep and anything heavy works. Wire leaders seem to spook them, but in a river it might not matter though it is probably not necessary. I usually use a short 15 or 20 lb. fluoro leader and an intermediate line. When it's hot and they are way down deep I tend to give up on the fly rod and just use a spinning rod and a rattle trap.

3"/+ charteuse, chartrruse/yellow, white/gold tinsel streamers. Profile and length matter more than color. Pickeral are a "bite-ee" fish... make it look alive and don't go small.
