Adding a second store on top of the old store

I was running a store selling hats in Canada, and have recently been asked to create a second store, identical in design, but with different products available from one store to the other. EI: In Canada I have a hat categorized "Men's Collection": :"Suede": :"HatName" For the second store selling the same products but different product availibility, EI: In the US I have a hat categorized "Men's Collection": :"Suede": :"DifferentHatName".
It seems that even though I choose the US store, all the categories from both stores are available, and I can't tell the difference between the US categories, and the Canada categories. Is there a work around so that the products, and categories intended for the US store, show up in the US product addition pages, and the products, and categories intended for the other store don't show up?
