Dear Dr. Bhat,The word एकदन्ताय doesn't appear in this file.
There are two more अथर्वशिखोपनिषत्, अथर्वशिर उपनिषत् in addition to गणपत्युपनिषत् or गणपत्यथर्वशिर उपनिषत्, only in the later the Gayatri, with the reading for एकदन्ताय appears. You may be correct it might have been composed in 17th century or later.In this list, many do not follow the literary history, for any purpose. But only with love for Vedic Literature who need not the help of History at all.

Exactly it should have been दन्ती, but in Vedic usage it is seen used as अजन्त instead of हलन्त, like रजस् is used as रजसा along with some अजन्त usages as रजेण!

If you correct it and recite it, then it will not be the Vedic Mantra and your own Mantra!
