Compel the Spirit, Daemonic Possession and Resurrection specifically
apply to cards that have been burned "since your last turn." If the
card you wish to affect burns on your own turn, can you Compel/etc it on
the same turn, on your next turn, both or neither?

Same.
The current (same) turn is "since your last turn."
Your next turn won't qualify.

If so, could that be worded differently ?
Something like "only usable if X has been burned during the current turn" ?

It would be clearer for that case, but would clearly reduce the
functionality of the card. cf. cards burned since your last turn
but before your current turn.
Big Picture.
That wouldn't be the same; 'since your last turn' includes the time
from when you ended your previous turn until the time you finish your
current turn (or next turn, if you are inbetween turns). This would
be important for cards which might get played outside of your normal
turn (e.g. under the auspices of Malkavian Madness Network, for
example). It would require quite lengthy wording to replace 'since' I
think, and since is pretty clear really (the period from but not
including the time referrenced up to the current moment).
