I like most greens in a salad. That includes kale, but not too much of it. I usually mix kale with another green or greens. Spinach is good, as is rocket and mixed greens. My favourite however is Boston lettuce.
I use the term 'rocket' instead of arugula because it sounds neater. I think many of the people of Britain and Down Under use the term 'rocket'.

For simplicity, I almost always use romaine and nothing else. I also stock
iceberg because I like it shredded on Mexican food; when a head of iceberg
is starting to look a little elderly I mix it in with the romaine.

I like pretty much any mix of greens, but it's just simpler to buy romaine.

I like romaine as well. I always cut out the centre rib. And iceberg is good as well.

I use romain plus whatever leafy greens are in season, spinach, and
loose leaf lettuces, like redleaf and bibb, I use various cabbages
as well, I especially enjoy bok choy. I like escarole too. If I see
piles at the produce section I'll ask if I can have the beet tops that
uneducated palates tear off for the trash. The produce manager is
happy to give me beet greens for free, otherwise they'd sinfully go in
the dumpster... the idiots don't know that beet tops are precicely the
same as swiss chard. I'll eat iceberg too but I prefer the dark
greens. I don't always use greens for salads, I use them in soups
too.

I like iceberg but rarely eat it as it doesn't have much in the way of
nutrients. Romaine and Spinach are my next favorites. I'll eat any of them
but the bitter ones need to be in small amounts.
