Everything you need to get a really good guess is there on the charts. A Roadeo had the same seat tube angle and top tube slope. Split the difference between the 55 and the 57 and you're at 81.5cm. The Roadeo has 2mm more drop than the SO, so the Simple One 56 would have a standover of 81.7cm with similar tires. I'd wager it was Jack Browns. Adjust up a few mm if you are going to run fatter tires.
Give them a call to make sure, but I'd bet a dollar that's an estimate within a couple mm.

I get about 81.5 with my tape measure (56 SO w/ jack browns).
