Any recommendations on Chicago area bike shops leaning less towards, or a good combination of, the mass market and more towards, maybe, fixed and single-speed, more Bobish and Rivish?

Boulevard Bikes in Logan Square, Cicli Urbano in Humboldt Park, Roscoe Village Cycles on Roscoe in Roscoe Village and Blue City Cycles in Bridgeport.  All great stores with focus on what you are describe.
 
Boulevard Bikes, the oldest of the bunch, sold some of the last Herons.

Without going into too much detail... here's a northsider's perspective:

There's a couple amazing bike collections worth checking out on display at Cycle Smithy and Oscar Wastyn. Yojimbo's Garage is the premier track/fixie shop, with The Bike Lane a close second. Tati Cycles is an enigma I haven't quite figured out...

I'd say that Boulevard Bikes is the most Bobish, and is worth visiting if you want service done or to see more "obscure" retail objects things like honjo fenders, BQ magazine, berthoud bags, and Handsome Bikes.
