LENTIL SOUP
This is a tried and true recipe that has been popular at many potlucks
• saute 1 chopped onion in 1 tablespoon of olive oil (oil is optional)
• add 1 stalk of celery, 1 carrot and 1 potato - chopped
• add 1 cup brown lentils (you can use other lentils but brown are traditional and cheapest)
• add 5 cups of water, 1 bay leaf, and 1/4 teaspoon of salt (salt is optional)
• bring to a boil on medium heat, reduce heat and simmer for 40 minutes covered
• add 2 tablespoons of soy sauce, tamari or liquid aminos before serving (optional but add other seasonings)
• optional variations: more veggies, different veggies such as kale or spinach, zucchini, corn, sweet potatoes, tomatoes, peppers, black pepper, cayenne pepper, other seasonings such as oregano and dried parsley, sauteed garlic, more lentils for a stew instead of soup
• serve with hearty bread, crackers, brown rice or quinoa
