This is an ongoing thread for the month of May for sharing your climate-friendly food suggestions, recipes, tips and experiences.

This traditional summer stew is made from tomatoes, eggplant and bell peppers.  Everything can be cooked together like a stew in a pot, or made into a gorgeous dish as illustrated in this video.  Substitute zucchini or other summer squash if you don't like eggplant.  Bell peppers can be omitted.  But the tomatoes are the base.  Roma tomatoes are often the best ones for cooking, but any type of tomato will work.  The tomatoes in this recipe will have to be large ones for big slices.  If you are using smaller tomatoes use Japanese eggplant that is thin like a cucumber.

For bell peppers, there are green ones, red ones and yellow ones.  They are all the same pepper in different stages of ripeness.  The bright, colorful ones are riper, sweeter, and much more nutritious.
