There is no way for Growl itself to do this. The problem is that Apple won't allow it. There are hacks like the bark plugin, but that plugin wouldn't be acceptable in the app store.
The real solution is to get applications to update to the 2.0 framework. When you hit that switch, then the app sending the notification will indeed be listed, but also use Growl.
