Changing from 80rpm to 100rpm should give you 20% less resistance for the same
power output

Unless I'm quite confused, I don't see how it could work. Changing gear
rather than cadence is another matter, as the load on the trainer can be
adjusted to be the same resistance across different gears. You may or may not
notice different inertia in this case.
