Sorry for the delay, I was on vacation for the past week. Regridding data is beyond the scope of what wrf-python can do. If you are just looking at plotting in Mercator, then you can define the Mercator map projection, and simply use the same latitude and longitude arrays as arguments to either basemap or cartopy. Unfortunately, the winds are going to be a problem. You can use the 'uvmet' product to rotate the winds to earth's lat/lon space, and basemap can rotate the winds to Mercator, but it requires the data to be already regridded on to a rectilinear grid (needs one-dimensional latitude and longitude arrays). Maybe someone else has a good solution to this and can chime in.
In any case, I'm not a regridding expert, but both NCL and ESMPy can do regridding for you (both use the ESMF regridding package). See the following:
