RISC-V and Networks on Chip

Hi all

I'm a CS student and I'm doing a project changing the microarchitecture of a RISC-V processor, my task will be to change whatever the implementation uses to connect the internal components (ifu, alu, etc) to use a NoC (Network on a Chip), and then test the results of the change in an FPGA.

What processors have good documentation or are easy to dwell into? I'd prefer using Verilog or VHDL, but I don't mind learning something new. What other things should I have in mind before starting?
