Small plot marketing info

I'd like to get any info you might have on marketing Sunchokes - AKA Jerusalem Artichokes from a small (1 1/2) in-town lot. Any certification or other requirements I need to meet.

So far I'm still spreading them and I have three varieties; Stampede, a knobby, white, 5' tall, decent producing type I got mail order. A red, knobby, 6' tall, nearly identical other than color to the white Stampede, decent producing type that I found in-town in a flower bed, and a white, carrot shaped, 11' tall, excellent producing, feral type I found in the woods near Stump Creek, south of DuBois.

I won't be producing more than a couple hundred pounds per year at the most on this lot. I'd guess most of what I'd sell would be for eating, but there might be some that would like to grow their own.
The tubers are a high priced delicacy in many better restaurants, which we don't have many of that caliber close by, but I could possibly supply one or two. They're also a major ingredient in some fiber supplements because of the low glycemic index and high prebiotic inulin starch they contain which makes them an excellent food choice for diabetics.
