Bike tour recommendations self guided preferred. . .

Hi, All.

I am interested in two separate bike trips.  First, I'd like to do a week in Northern Italy that includes riding the Stelvio Pass.  I don't want to do a ride that is all climbing, however, more like 2 days on and one day easy for a week or so.  

Second, I'd like to do a ride in Tuscany that includes the Strade bianchi.  

Does anyone have recommendations for either a tour company or a company that provides self guided tours that may align with what I am looking for?
