Nephio v1 product scope and user stories

Hello SIG-arch community members,

As a follow-up to our discussions in the last meeting, we have updated the Nephio v1 product scope and user journeys doc, by incorporating the suggestions from the Requirements document. The updated user journeys model the Design principles that we had shared a few weeks ago (and are also linked from the user journeys doc).

We will spend time on Monday to discuss this further in the bi-weekly meeting.
