Favicon override not taking (Docker fresh install)

Hello,

We are working toward dockerizing our instance, and to that end I installed a local instance and re-worked our plugin overrides. Fresh out of the box, I'm not able to get our favicon to load in browser using the plugin overrides found here: https://docs.archivesspace.org/customization/plugins/#customizing-the-favicon

I have followed that document precisely, and I can see the overrides taking place in the code, but the images themselves do not load. They are in the correct directory, as stipulated by the document:

The config does indeed have the favicon enabled for public and frontend (as is default), but no browser favicon appears:

What should I try next? I'm stumped on this one.

Here are the overrides shown taking hold in the page itself:

It's like it's not seeing the image directory, and thus not loading the images.

I took a look at our customizations and I'm using the below for the staff side override - despite the documentation saying otherwise
