Please file an issue at https://crbug.com/new with a sample attached and we can take a look.

HEVC is only supported on platforms with HEVC hardware decoding; but that looks to be true in the chrome://gpu you shared.

I noticed that ffmpegDemuxer is used for processing the <video> element (and it works fine), but for MSE, ChunkDemuxer is used, which returns an error: Unrecognized video codec profile.

Does Chrome support the HEVC codec with MSE? Are there any recommended solutions or workarounds for this issue?
