Via apps, or something that is inbuilt on the Chromebook?

I have serious concerns about some of the networks I have to work on, but I wanted to know what I could do to check network security.

For the record, I am on the latest Dev channel and do not install apps from outside the playstore.

There doesn't seem like a way.
Maybe the Diagnostics app in the Connectivity Test could help you a little bit, but you can't just check if a Wi-Fi is secure or not that easily.

It should warn you if you are connected to an unencrypted wireless connection that didn't have a passphrase by showing an open padlock next to the Wi-Fi icon, and then if you want to know you're fully secure you need to use a VPN service that will prevent snooping and that should show a little key beside the Wi-Fi icon.

There is already VPN Support in Chrome OS (as shown below) and a way to tell if Wi-Fi is password protected or not.
