can't switch from beta to stable channel

This is on a 2017 Pixelbook.

I go to Settings, search for "Channel", click "Change channel", click "Stable" and "Change channel and Powerwash".

Once a download finishes, it reboots, I see a Powerwash screen, log back in and go through setup, and then I'm presented with "Beta 135.0.7049.19" in the bottom right menu.  If I go to Settings, "Beta" is selected again.

I've gone through this whole process twice now.

The second time I first disconnected my Android phone, as I saw somewhere that someone had a similar issue and disconnecting their phone fixed it for them.  But no dice.

Unfortunately, the Pixelbook / Eve currently has 'No Update' as shown below so that may be why it will not switch back to the stable channel:

I believe the latest stable version for it is a Long Term Support (LTS) release build, see below:

That is Chrome version 126.0.6478.132 which dates back to June 25, 2024 and is available in the Chromebook Recovery Utility extension or you can download it from the site linked below:
Fortunately, this device is supported until Aug 2027 with Google Play support so that's a win in my book.
