I want to use a certain version of certain Chrome extension, but it seems to be updating automatically. How can I prevent this from happening?

I am not sure there is a way to do that while using the original extension (with its extension ID).
You can manually copy that extension and load it as an unpacked extension. It will not update in this case, but the ID will be different, unless you modify its manifest to use the expected ID (this is important if the extension uses its hard coded ID in the code for stuff).
