Chromium Installation Has Disappeared

I've got a startup shortcut to this location:

C:\Users\Dave\AppData\Local\Chromium\Application\chrome.exe

I haven't used the browser for several months but I never uninstalled it and I've always had Windows 7 updates disabled. I'm rebuilding my PC due to me damaging the graphics card slot which fell off so I'm trying to backup my Chromium profile off the C drive as I don't have access to the Windows installation since the motherboard won't boot as it's damaged. But there's no issue with the C Drive and the above location doesn't exist any more. What could possibly cause the Chromium folder to disappear?

I also have Chrome installed to here: C:\Users\Dave\AppData\Local\Google\Chrome

Both were installed for several months without issues.

I also have Microsoft Edge installed in the C drive and Brave Portable installed to a different drive.

Create a new user without administrative access with the same name and password as the old one, access it, then copy the profile folder to the Desktop:

Example:

Old Disk - > C:\Users\Dave\AppData\Local\Chromium\User Data\Profile 1

Install Chromium for that user, after starting, close the browser, go to that folder and copy the data over it.
