I've been using chromium snapshots for awhile:
http://build.chromium.org/f/chromium/snapshots/Win_Webkit_Latest/
But so far the only way I can find out what the version and build
numbers are is to run the browser and click About Chromium. Is there
some code in one of the files in the folder so I can avoid trial and
error?

Right click on chrome.dll, go to the "Version" tab, under "Other version information", there are "File version" (which is the version) and "LastChange" (which is the build number, I suppose).

The purpose is to know what version to download. Downloading then
looking in the files is less than optimal when they could just put the
numbers in a file when posting. Gong back to get an old build is a
nightmare.

The REVISIONS file has the Chromium build number information -
The version is not available from there.
However, you might be able to utilize omahaproxy.appspot.com/revision, you enter a Chrome version (it must be a version that was somehow released, I think, even to the canary channel - which is updated almost daily) there and it gives you its build number.
