I am reading over the histogram data collection code, and I have a question? Where does this data go when it is sent back to Google? Is it visible on any of the public Chromium websites?

The question is more about specific products built on Chromium - if you just build unbranded Chromium, histogram data doesn't get sent anywhere. (Though you can view it locally at chrome://histograms).

Otherwise, for Google Chrome, the data is internal to Google and generally not shared publicly. Though some of the aggregate data about web platform features is made available through chromestatus.com.

I can't speak for other Chromium browsers, but I suspect their data isn't public either.
