I'd like to learn how to build Chromium on Windows using GaneshGL as the default Skia backend. In my current build, GraphiteDawnD3D11 is set as the default Skia backend.

Both Ganesh and Graphite Skia backends are part of the build. You can force Graphite off with the command line flags `--disable-skia-graphite` or `--disable-features=SkiaGraphite`.
