I was able to fix this by plugging a mouse in to the remote computer, it
previously had no mouse or keyboard due to being used 100% by remote.

Okay - I kind of solved the problem for me. Maybe it will work for you.

When you log in to Chrome Remote Desktop, there is that notification bar
that says "your desktop is being shared with..." on the screen. For me,
it's always at the bottom when I start. If you move that notification bar
up just a fraction, suddenly I'm able to see the mouse on the shared
desktop. Just position your mouse pointer while you can see it below your
shared screen, and you can guesstimate where the mouse is and move it onto
the shared screen to move the notification bar.

Not sure if this will work for everyone, but it does for me.

So I just leave an extra mouse plugged in and no longer have this issue
