I updated my app to be listed under "Educational Games" sub-category
of Games category. When i look under Games category in the webstore, I
don't see the sub-category "Educational Games". Please advice.

It does not look like the old categories on the live site have been
updated to the recently announced updated list of categories. Give it
some time.
