Hi Sharon,
All Google Search Console data has a two day lag. Core Web Vitals in particular within Google Search Console is based on a 28 day rolling simple moving average. If you make any changes, you will need to wait 28 days to see them on that screen. Google Search Console Help has a great resource[0] that is worth checking out if you haven’t come across it already.
Alternatively, you can checkout more up to date sources such as Page Speed Insights[1] if you would like to check a few URLs on a regular basis. If you need more than a handful on a regular basis, as your developers to look into the CrUX API[2].
