Using LLMs like ChatGPT in a privacy-respecting environment?

Does anyone know of a way to be productive using Large Language Models
(LLMs) like ChatGPT while still protecting your privacy. I have heard of
open source LLMs being available from more academic work (example:
LLaMA), but I have heard they are not nearly as good. Especially in
technical questions like coding topics.

Has anyone tried self hosting one of these? I had briefly tried to run
one with minimal effort, but it was crashing.
