You can edit this setting in Opera6.ini when Opera is not running,
under
[Adv User Prefs]
Mine currently looks like
HTTP Accept=text/xml, application/xml, application/xhtml+xml,
text/html;q=0.9, text/plain;q=0.8, video/x-mng, image/png, image/jpeg,
image/gif;q=0.2, text/css, */*;q=0.1
("borrowed" from Gecko)
Keep it all on one line, and seperate entries with a comma. The ;q=n.n
qualifiers are optional, but make sure to end your entry with */*

What entry do you want to add?
I have been playing around with this some WRT application/xhtml+xml and
have stumbled across a few obscure bugs.

Does your original Opera6.ini come with the "HTTP Accept" setting? Mine
doesn't (fresh install), which means I have to add it by myself.
But it appears that if I add mine (and only mine), it will remove the
existing:
text/html, image/png, image/jpeg, image/gif, image/x-xbitmap, */*
Tricky...
Also, I don't find the equivalent .ini file on Mac. Do you know where, if
any?

Not at all... Opera is just letting you over-ride the default, rather
than trying to guess if you wanted to prepend or append your choices to
the default.
HTTP Accept=text/xml, application/xml, application/xhtml+xml,
text/html;q=0.9, text/plain;q=0.8, video/x-mng, image/png, image/jpeg,
image/gif;q=0.2, text/css, */*;q=0.1
works well and you can edit it to include all of the originals.
