What will happen if i play Psyche! after combat against an illusionnary
vampire (Illusion of the Kindred). Will my Psyched Vamp get into combat
with the Illusion, or the Vamp itself (the one who played the IotK in
the first place)?

There is no room to play Psyche! (superior) between the time Illusions
of Kindred ends combat and when the new combat begins. So, when you play
Illusions of Kindred, Psyche! cannot be played. [LSJ 19971003]

Correct - so Psyche! cannot be played before the Illusionary combat begins.
But also note that Psyche! cannot be played after that combat, since the
requirement on Psyche! that the opponent be ready is not met (the opponent
is removed from the game, so is not ready).
