Ginger- How long does it last ?

How long does fresh? ginger last ? I use powder all the time, but fresh
is readily available. I would rather grate my own but do not know the
shelf life.
Can anyone help ?

So, what do you intend to use it for?
Why not buy an amount you intend to use
within a week or two and replace as you go.

There are many methods for preserving ginger
but none will yield fresh ginger... the best way
for approximating fresh ginger is to freeze it.

Of course you may choose to grow your own.

A pretty long time if you peel, cut in chunks and store in fortified wine,
such as sherry or marsala in a jar in the fridge. The wine gets pretty
good, too.

Pretty damn long if you replant it and keep it in a sunny window. And
watered. ;) Just dig it up and break off a small chunk as needed.

it seems to keep 2-3 weeks in my fridge, wrapped in a plastic
bag. you have to be careful and buy from bins where pieces of
root don't aren't moldy.

if it was going to keep it longer, i'd try the old trick of
keeping it in sherry to prevent mold.

The other advantage to freezing is that it shaves of realy well. Maybe
not fresh, but better than powder from a factory.

Does anyone know anything about drying and making homemade powder?

"better" is not germane. There is nothing better or worse intrinsic to dried
or fresh spices, only different. Btw, most every spice is used primarily in
its dehydrated form and ginger root is classified as a spice. And what do you
have against factorys?

I chop it up finely (in one of those small spice choppers like a mini
food processor), place 1 TB lumps on a piece of aluminum foil, freeze
it, them roll up the foil (like a sleeping bag), and place into a
freezer bag. When I need 1 TB of ginger, it's there and ready, just
needs a minute or few to defrost, or can be thrown into a pan frozen
if in a hurry. The foil and plastic keep it from dehydrating in the
freezer, unless somebody (I wonder who) leaves the bag open and foil
unwrapped.

damn good tip there, betsy. thanks!
i either keep the fresh ones in the fridge wrapped in cling film [keeps
for a couple of weeks], or cut into chunky chunks and keep in little
freezer bags. i'll try finely chop it next time and wrap up in smaller
portions.

I break it into it's nodes, put it in a pint mason jar, vacuum it with
my Foodsaver, and it lasts for months (till it's gone).

I bought a large rather straight piece and I keep it in the freezer.
When I need a bit of fresh grated, I just take it out and grate on a
rasp. It's quick and easy, and thaws really quick. Lasts forever!
