I would be very interested as well.

For example, I'd like to have a script that could take the currently logged
in user and create a new profile to our Exchange server based on their last
and first names. Myself, I'd like it also to be able to generate a PST in
their profile.

I would like to have this for our fresh builds for new users...

Actually I was trying to narrow in on what you want to do with the profiles.
Modify? Upgrade from something else? Create from scratch? And whether they
are standalone, Exchange server based or whatever.

The details of this aren't truly WSH-centered anyway - in most cases,
Exchange people will know a lot about the tools and options so the
Exchange/Outlook groups are good places to check as well. Here's a short
list of links that can be helpful to start tracking down some information on
how to do this...
