One can add a new outgoing mail server from the list of available mail
servers.
One cannot, apparently, REMOVE an entry from this list.
Anyone know of a workaround?

There's an Applescript to do this.
Library:Scripts:Mail Scripts:Manage SMTP Servers.scpt

Terrific tip. I have the script icon on my top menubar, so it was easy
to scroll to this and run it. It didn't list my authsmtp servers,
which I thought was a string match bug, but in the source I see:
-- Don't add to the list of smtp servers to potentially delete
-- if the server is actively being used by an account
So I made sure that one of my duplicated entries was not in use and I
was able to remove it.
This is the first of the bundled scripts I've found a use for, but on
browsing the collection I see some file renaming scripts that look
quite useful. I think I'll have to dust off my my very modest
AppleScript skills, unused for over 10 years.
Thanks!
