REC: Macaroni and Cannellini Bean Soup with Rosemary

SOUP WITH ROSEMARY

Source: unknown

6 tbs. olive oil
2 large garlic cloves, crushed
1 lb. very ripe plum tomatoes (or 1 16-oz. can plum tomatoes,
drained), peeled, seeded and coarsely chopped
1.5 tsp. minced rosemary (or 3/4 tsp. dried)
1 can (16 oz.) cannellini beans, rinsed and drained
3.5 cups water
4 oz. ditalini (or small elbow macaroni), about 1 cup
salt
black pepper


Heat 4 tbs. of the oil in a soup kettle. Add garlic and sauté
until fragrant - about 30 seconds. Add tomatoes and rosemary
and simmer until the tomatoes release their juice - about 5
minutes. Add the beans and 3.5 cups of water and bring to a
boil then simmer 10 minutes. Transfer half the soup to a food
processor and puree. Return to the rest of the soup in the
kettle and return to boil. Add ditalini and 2 tsp. salt and
simmer until the pasta is just tender - about 10 minutes. Let
stand 1 hour to develop flavors . Re-warm soup and serve each
portion drizzled with 1/2 tbs. olive oil and sprinkled with a
little freshly ground pepper. Four servings.

Yes! Sit at home, going "please please please *somebody" ask about
macaroni and bean soup so I can post this recipe!!!"


I don't know what Wertz's problem is, but he sounds like a dumbass.

Pretty much every regular, and many not-so-regular types, have
posted recipes out of the blue.

Sounds like a good recipe to me. I just made bean soup last night and am
always glad to get a new recipe. I'm going to print it out for my recipe box.
The only unsolicited recipes I have a problem with are ones where the poster is
trying to sell something. Freely sharing good food ideas is great!

Just tried this today, Charlie, and it's good. I used dried roasemary,
and think I'll put in a bit more next time. I'll also use less pasta,
because by the time it'd sat for the hour to blend flavours, a lot of
the liquid had got absorbed. Oh, and I really cut down on the oil too.

Glad you liked it Kate. Yes, I tend to like things oily. I
tend to overdo it with Italian food - all that good olive oil.
