My set has 8 disks. Which i assume (it's at home, i'm at work) is 26
episodes.
Now i heard that there are alternate versions of episodes 25 and 26.
And that there's a movie named "Death & Rebirth". And a movie named
"The End of Evangelion". I'm not sure if there's more.
If i was to buy "Death and Rebirth" as well as "The End of
Evangelion", would i then be able to watch everything? OR would
something still be missing. If so, is it available on DVD and where
might i find it?

The series is the 26 episodes of the box set.
Death and Rebirth is basically a clip show with about 30 seconds of
new footbage and the first half hour of End of Evangelion tacked on
the end. You don't need to see it if you've seen the series.
End of Evangelion is an 'external' remake of episodes 25 and 26 - the
movie ending makes much more sense if watched alongside the last two
eps (which are set mostly inside Shinji's head).
In other words, buy EoE as well and you're sorted. ^_^

I agree that you don't NEED to see it if you've seen the series,
however its always nice as a quick refresher.
