I can't speak for cannon, but on the olympus camera, you can set it for
whatever you want, and when you turn it back on, it will go to default
setting, unless you also turn the reset features off when you make your
other adjustment. Once you turn the reset all to off, you should be all
set...

The point of auto mode is to cover the widest range of needs. It is
preferable that the settings you used 2 weeks ago when you last
used the camera aren't persistent. That's what the "manual" mode is for.
